Getting Fresh...

...in the kitchen ;.)

Happy Friday! Today just seems like it is a recipe sort of day. One awesome thing about moving to Cali is all the access we have to some amazingly delicious fruits and vegetables. It has inspired me to jazz it up a little using all of the fresh ingredients. Everything just seems so bright and vibrant..YumO! I don't know if this has happened to you guys but for the last year or so I have found myself making the same things over and over again, just because it's easy. I have some "go-to's" in the old noggin' but I am looking to switch it up a bit. So I dove in and started last night, because enough was enough! I guess I struggle sometimes because I get intimidated cooking with ingredients I am not familiar with, however, I have learned that fear does not belong in the kitchen ;.) SO It was time I got creative with my food just like I do with design. Here are two killer dishes that turned out terrific & I wanted to share it with my pals....



Pasta with Pancetta & Peas
*ingredients
pancetta
olive oil
chicken broth
kosher salt
Parmesan cheese
shallots
mini peas
sugar snap peas
edamame peas
pasta

Dessert was a throw together of my own creation
*ingredients
sweet white peaches
cinnamon
butter
sugar
heavy whipping cream
vanilla
puff pastry
A little secret....I eyeballed everything & made it up as I went. I cooked the puff pastry according to the package....I made my own whipped cream using the heavy cream, sugar, and vanilla in a bowl and whipping it for about five minutes. To make the peach filling I diced up peaches...put in a saucepan over medium to low heat, I added a tablespoon of butter, a small scoop of sugar, a dash of cinnamon and cooked for 15 minutes...til gooey and yummy. I then filled the pastry with the peaches & topped with the whipped cream. It really was fantastic and so much better than a cookie out of a package. ;.) which I am totally guilty of!

After finishing everything up I felt accomplished and it was actually kind of fun...who knows I may start testing out more recipes in the kitchen ;.) Now I am off for a busy weekend of birthday celebrations and wedding projects...I hope to share with you guys on Monday, I can't wait! Have a great weekend...

  1. You go! The pasta looks delicious! We're in the mid-Atlantic without central air, so I pretty much ban cooking in the summer. Despite the heat, I've been making a brilliant adult and toddler-friendly pasta recipe straight from Italy.
