Fool proof Banana bread...with chocolate ;.)

Can I just start off by saying TGIF?!! It has really just been one of those weeks. You know what I'm talking about, the kind of week when you're just tired of yourself....feeling unexciting and just simply blah... Being sick did not help the situation, it actually made blah more like bleh.... ;.) But I am starting to feel better and things are looking up... and I give the credit all to this guy....
Warm, delicious & simple chocolate chip banana bread. I don't know about you but when I am feeling sort of disconnected from my life or a little out of whack...baking always brings me back to what is important and back to myself. So last night I whipped out the measuring cups, my trusty spatula and got to cookin' this lil darlin. It made the entire house smell like bakery heaven. So I invite all of you, good week or bad to bake this sweet deliciousness and escape with me ;.) Here is the fool proof recipe:

Yield: 2 medium loaves or in my case 1 large loaf and four small loaves

2 2/3 cups all purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 1/2 teaspoon baking powder
4 large eggs
1 cup sugar
3/4 cup butter
4 ripened bananas (this is where browner = better)
2 teaspoons vanilla
1 package of chocolate chips (I heart Ghiradelli)
1 little dash of cinnamon

Preheat oven to 350˚F and mix your flour, salt, baking soda, baking power and Cinnamon together in one bowl. Then with a standing mixer mix your sugar and eggs. After incorporated add the vanilla, the butter and lastly the banana. Then Combine the wet & dry ingredients trying not to over mix. Then add the chocolate chips last, stirring them in. (You can also add nuts if you like but I chose not to). It then goes in the oven to get all yummy for about 40 mins. However I start watching mine after 25 mins and add foil to the top if the top is getting too brown.

Let cool then slice.....yum! It's not as if this is a magic recipe but somehow it does have magical healing powers for this gal. ;.) I made small loaves so that the Hubs could take them to work. Here is one I wrapped up to make transport easier....I would have loved to have made it girly, however it was going to a military man so I held back ;.)



...at least I got to use my special twine haha. So this was a nice way for me to wrap up a chaotic and a do-over worthy week. I hope for all of u out there that had a week like me, will give this a try...it just might make you smile. I look forward to seeing you all next week after the holiday ;.) Happy Labor Day!
