Well folks...you can take the girl out of Texas but you can't take some of the Texas cuisine out of the girl. This time of year starts my love affair with chili.
There is nothing better than a warm bowl to eat while curled up on the couch... the wind gushing through the windows. Or the simple smell of it lingering throughout the house while it simmers away on the stove. Needless to say, it is one of my family's favorites and over the years I have adapted a recipe and it is nothing short of yummy. Last night was our first night of the season to devour a pot and I thought you might enjoy the recipe in preparation for Fall....
It's super simple. Season the meat with salt, pepper, garlic and onion powder and Worcestershire sauce. Brown the meat and chopped onions together. Add the chili seasoning, as well as, one can of tomatoes and one can or ranch style beans and one can of drained black beans. Stir and simmer. You can add more or less beans and tomatoes depending on how chunky you like it. I prefer mine on the less soupy side. My favorite is to eat it piled high with Fritos and cheese on both the bottom of the bowl and on top of the chili. Not the healthiest but the yummiest. It makes me as excited as a man sitting in front of the tube on game day.
