Eggplant sticks {a huge thanks}

Let me start out by saying you guys were so incredibly sweet, empowering, and encouraging yesterday and I appreciate every stitch of advice I received.So all I can say to the peace of mind you gave this momma is Thank you, thank you, thank you!

Today I wanted to show you guys what 'was for dinner'. As fall is quickly approaching (next week officially) that means my go-to crock pot suppers... chili, dumplins, stews, and soups take center stage in our tummies along with delicious baked apples and pumpkin. So I thought it would be fun to make a fun summer meal for the little man with some of our last sweet ears of summer corn and "pan fry" in extra virgin olive oil some eggplant. For extra Mom points I served it all in a little burger basket. The little man loved it and what a great way to get some eggplant into him.

Dip eggplant strips into egg, flour, salt, and pepper and pan fry in evoo.
I made sure to slice them french fry style to make them more fun and to let him dip them into marinara sauce. Other than the stained red shirt and dirty basket, no evidence of these vegetable beauties existed when we got up from the table. So with that meal we happily say goodbye to summer in this household and look forward of breaking bread cozy style the next few months.
