Hey guys let's give a nice warm welcome to Kayleigh who is guest posting today and sharing an awesome cocktail recipe. I don't know about y'all but I could go for a nice refreshing adult beverage after the week I've had (I heart Fridays).....
Hi all you Little Glass Box readers! I’m Kayleigh from The Gotta Have It Girl and I was so excited to be able to share my favorite summer drink recipe of all time with you. It’s taken me a long time to perfect this simple drink but I love it so much that I can drink it again and again. This refreshing mojito recipe is just the ticket to getting through these hot summer days and nights that everyone seems to be having lately. Are you as pumped as I am to get the drink party started?
Here is what you’ll need:
Rum (I use Bacardi Superior White Rum)
Simple Syrup* (store bought or homemade)
A Shot Glass
(How to Make 1 serving): Add 1.5 shots of rum to your glass and 1.5 shots simple syrup (if you like your drink a bit tart like me then leave off the .5 of simple syrup and just add 1 shot). Squeeze the juice from 1 lime and 1 lemon and add to the glass. Add some fresh mint pieces with a couple lemon and lime slices and muddle at the bottom of the glass with a muddler. Add desired amount of ice and fill the rest of the glass up with club soda.
*Notes: I use a 20 oz pilsner glass for this recipe. I know it's kind of strange, but I like it. It gives me the room to add just a tad more of club soda since I like mine more tart and it makes stirring easier when finished adding the ingredients. I have also used a 16 oz glass tumbler before too and it works just as well. Also, if you would like to make your own simple syrup just add equal parts water and sugar to a medium saucepan and simmer for about 15 minutes. You can store it in a sealed container in your refrigerator for up to 3 months.
I hope this little iced beauty finds it's way into your next summer party. Happy mojito making and enjoy the rest of your summer! XO, Kayleigh
