Well yesterday was quite an experience. I celebrated the Hub's 31st birthday by spending the entire morning and afternoon making these delicious gals. All while juggling a two year old and two refrigerator repair men. But I wouldn't have had it any other way. These cupcakes put a huge smile on the Hub's face and tasted YUMMY! And luckily I didn't have to make dinner afterwards.
These scrumptious birthday treats made my taste buds do flips. They were maple bacon cupcakes with maple cream cheese icing. Here is the quick run down of how I made them. Each step was easy, it just took a bit of time (just keeping it real).
Each part had to be done in stages. 1) cook bacon for the cupcake batter 2) make cupcakes from scratch 3) Make pancake batter and cook mini sized pancakes 4) Make icing from scratch 5) leave some icing to dye yellow and make to look like butter 6) decorate with sprinkles and maple syrup
As stated above, I separated out some of the icing and dyed it yellow. I wrapped it in plastic wrap and formed it into a log shape and put it in the freezer. After it hardened a little, I cut it into "butter-like" pieces. I used the "butter" and real maple syrup drizzled on top for garnish. I also had fun using skewers and washi tape along with a fun sparkler to make it extra special (birthday boy got the extra sprinkle love).
They were a such a surprise for the Hub's after he walked in from a long day at work. I decided they would be so appropriate this year because Oliver & Ryan have a special connection with pancakes. His Daddy always makes them for him and it has now become their father and son tradition. I thought it would be a unique way to celebrate him. It may have been a long process, but it was totally worth it to do it for someone who means so much.
